(also suitable for gluten-free, vegetarian and Vegan diets)

This eno-gastronomic holiday is a travel through the culinary tradition of the beautiful Valle Umbra, a fertile valley with many waterways surrounded by a backdrop of green hills covered with vineyards and olive groves. In this valley we find the well-known small medieval towns of Assisi, Montefalco, Bevagna and Spello, but also larger cities such as Perugia, the capital of the province crossed by the river Tiber, and Spoleto, lying at the foot of the green wooded Monteluco. You will stay the first days in an eco-accommodation along the babbling river Clitunno located between Trevi, Bevagna and Montefalco. In the fine dining restaurant are used local products such as truffles, mushrooms, veal and extra-virgin olive oil. You have a cookery course and one morning will be accompanied for searching herbs in the fields. Umbria is famous for its truffles and you can't leave this lovely region without truffle hunting experience. You have a lunch to taste the truffle you found. Then you go to a Country-House at the foot of Assisi, where you have another cookery course with chef Rosita.

Day 1

Arrival in the country house

The country house is a farmhouse dating back to the 18th century. It is recently entirely renovated to the standards of a eco-architecture: the use of natural and recycled materials, and solar panels for energy. There are 6 lovely apartments of various sizes, a restaurant, garden, saltwater pool and car park. If you arrive early you could visit Trevi or Spoleto, a nice town with many monuments to visit like the cathedral with fresco’s of Fra. Filippo Lippi, the roman house, the castle and aqueduct Ponte delle Torri or Trevi, set on a panoramic hill with view over olive groves.

Overnight in your country house.

Day 2

Searching for herbs in Trevi, Montefalco, Clitunno Springs

After breakfast you have free time to explore Spello, famous for its flower carpets in June and for the Pinturicchio paintings. Spello is proudly built on the slopes of Mount Subasio. The town has well preserved its medieval character and in the old centre you will find a maze of alleys, cheerful tinted by the plants in flower boxes. The main sights are in the centre: the S. Maria Maggiore church with the colourful fresco cycle by Pinturicchio and two works by Perugino, the S. Andrea church, the city museum, the Roman mosaics and Roman city gate Porta Consolare and Porta Venere. Then you could also visit Bevagna, situated nearby: it is an old medieval town with numerous and important Roman ruins. The major attractions are: the wonderful square Piazza Silvestri, palazzo dei Consoli (1270), which hosts the Theatre Torti and the Romanesque churches of San Silvestro and San Michele. In the upper part of the town there is the church of Saint Francis (End of XIII century): next to the altar, there is the stone where Saint Francis stood when preaching to the birds in Pian d’Arca. In June, do not miss the festival known as Mercato delle Gaite, a wonderful re-enactment of old medieval markets and crafts.

After lunchtime you will search herbs in the fields with Prof. Loschi, specialized in fresh herbs. In the late afternoon you have the cooking course with chef Stefano or Rita during which you will  prepare dishes from the Italian cuisine (some of the most common national recipes). In the evening during dinner you will taste the delicious dishes prepared during the course.

Day 3

After breakfast you leave to go to Trevi, where you are expected for your truffle hunting experience. Accompanied by the truffle hunter and his trained dogs you go searching truffles in the woods and will taste some fresh truffle in the fields. After the hubting you will have a delicious lunch where you will taste some a truffle dish. Then you go to Assisi, a town where history, traditions and art are fused together in harmony. You can enjoy wandering through the alleys, stepped streets and crossing the squares with many terraces, inviting you to enjoy a delicious Italian ‘gelato’ or drink a hot cappuccino. There is much to see such as the basilicas of St. Francis and St. Clare, the castle, many museums and the forum romanum. You get a description of a cultural walking tour that takes you along the most important monuments of the city.
